Seven years ago it was the turn of "UMAMI" to join the regular four of Sweet, Sour, Salt & Bitter; today, a Telegraph.co.uk article highlights the testing of this new sixth taste sensation. Depending on where we live in the world, our "starchy" taste experience may differ, i.e. potatoes, rice or pasta. No longer is the taste just associated with the breakdown of starchy foods in the mouth (amylase working on starch to eventually produce simple sugars, i.e. glucose, fructose, galactose) - it does provide its own distinct taste experience. Welcome "STARCHY"!!
